The other day I was looking online at some recipes and came across this one at mykitchencafe.blogspot.com. We like wraps however the tortillas or pitas are always tasteless and dry. I think the best description for them would be cardboard. I don't eat much cardboard now, but in my early years I am sure I ingested some which gave me a healthy dislike for it. I saw this recipe and decided to give it a try.

On another note my wonderful husband Cody has two responses when I ask him if he likes dinner. His responses are "it was fine" or "let's not have that again." The "it was fine" response always has to be solicited. However the "let's not have that again" response usually isn't solicited. It doesn't matter how many hours I spend making a fabulous meal for him it is always "fine." So, as we were eating these wraps Cody asked me if they were very hard. I told him no. He then proceeded to say he wouldn't mind if I would make him some so he could take them for his lunch. This is the BEST compliment he can give me on my cooking. When he asks me this, I know the meal was better than "fine." Anyway, here is the recipe!

Soft Wrap Bread

3 to 3 1/4 C. unbleached all-purpose flour
1 1/2 C. boiling water (I added a bit more while kneading.)
1/4 C. potato flour OR 1/2 C. potato flakes
1 1/4 tsp. salt
2 Tbsp. vegetable oil
1 tsp. instant yeast

Place 2 cups of the flour into a bowl or your breadmixer bowl. Pour the boiling water over the flour and stir till smooth. (It doesn't really go very smooth.) Cover the bowl and set aside for 30 min.

In a separate bowl, whisk together the potato flour or flakes, 1 C. of remaining flour with salt, oil and yeast. Add this to the cooled flour/water mixture, stir, then knead for several minutes by hand or mixer to form a soft dough. Let dough rise for 1 hour or if you forget about it, a few hours.

Divide dough in 8 pieces, cover and let rest for 15-30 min. Roll each piece into a 7- to 8-inch circle and dry-fry them (fry in frying pan without oil) over medium heat for about a minute or so on each side. They should be puffed a bit and flecked with brown spots. Transfer cooked break to a wire rack, stacking them to keep them soft.


We have made these a few times. They could be filled with anything. We did a caesar wrap the first time with come good crusty chicken, lettuce, bacon and caeser dressing. This last time we did Honey Spicy Chicken with avocado, lettuce and dressing. It would have been even better with mango and Bermuda Vinaigrette but I didn't have the time and Walmart was out of mangos.
